It’s the holiday season; and we recommend celebrating with rods, reels and rainbows. Rainbow trout, that is.

We do winter stockings when the water temperatures permit it, to provide an opportunity for anglers to catch trout in Texas. It’s a species of fish that anglers wouldn’t catch otherwise, so we stock them, and we intend them all to be caught out during the season.

Carl Kittle (kitl) is a biologist with Inland Fisheries. He says thanks to abundant rainfall throughout most of the state, there’s plenty of access to stock lakes and ponds.

This year, things are pretty well back to normal. Looks like our normal level of stocking will happen.

The agency will stock more than 290-thousand rainbow trout in about 150 sites statewide.

Carl Kittle says we stock rainbows in winter because these fish cannot survive our hot summers. So, when you reel one in this winter, take it home and eat it.

For convenience (or when you need to prepare something the kiddos will eat) fish sticks and canned tuna can save the day. However, when you can slow down and take a little extra time – and it really doesn’t take that much more time, but it tastes like it – excite the taste buds of family and friends with the savory goodness of well-prepared fresh fish. It’s sure to make a splash.

Whole Cooked Trout Italiana
Recipe by Cecilia Nasti
Prep & Cooking time: 30 minutes or less
Serves 2

Annual winter rainbow trout stocking runs December through early March statewide. They’re fun to catch and make great table fare.

Ingredients
• 3 tablespoons olive oil
• 1 clove garlic, minced
• 1/4 teaspoon dried oregano, crushed
• 1/4 teaspoon dried rosemary, crushed
• 1.5 tablespoons red wine vinegar
• 1/4 teaspoon sea salt or Kosher salt
• Pinch red pepper flakes (optional)
• 2 whole, one-pound rainbow trout, cleaned, heads on
• 1 large lemon cut into wedges
• 1/4 cup fresh Italian flat leaf parsley, chopped

Directions
1. Heat the broiler.
2. In a small saucepan, combine the oil, garlic and dried herbs; simmer over low heat, about 2-3 minutes. This will marry the flavors. Be mindful not to burn the garlic otherwise the oil may taste slightly bitter.
3. Remove the oil and herb mixture from the heat and stir in the vinegar, half the salt, and a pinch of red pepper flakes.
4. Place the whole trout on the broiler pan and sprinkled each, inside and out, with the remaining salt.
5. With a pastry brush, apply the oil, herb and vinegar mixture onto the fish, both inside and out.
6. Broil the fish about 5-inches from the heat source for 4-5 minutes on one side, before gently turning it to other side and cooking an additional 2-3 minutes until just done; an instant read thermometer inserted into the fleshiest part of the fish should register 120-degrees Fahrenheit.
7. Brush the hot fish with some of the remaining oil, herb and vinegar mixture.

8. Plate and whole fish; sprinkle with chopped Italian flat leaf parsley, and serve with lemon wedges. Serve hot.
This dish would pair well with a winter salad of arugula, thin-sliced red onion, shaved fennel bulb, Texas Ruby Red grapefruit sections, Texas pecans, shaved parmesan cheese, and simple vinaigrette.

Casa Pav Rainbow Trout with Mexican Mint Marigold

Ingredients
• 1lb or 1 filet (side w/skin) of trout, de-boned
• 1-2 teaspoons of extra-virgin olive oil
• 1 teaspoons of kosher salt
• 1/2 teaspoons of freshly ground pepper
• 2 tablespoons of Mexican Mint Marigold leaves, rough chop
• Several Mexican Mint Marigold flowers for garnish

Directions
1. Preheat Oven 400
2. Place parchment paper on a 1/2 sheet pan.
3. Gently place the trout on top of the parchment paper, skin-side down.
4. Drizzle olive oil over entire trout.
5. Sprinkle salt and pepper over the entire trout.
6. With your fingers, softly rub olive oil, salt and pepper into the flesh of the fish.
7. Rinse & dry hands.
8. Sprinkle the rough chopped Mexican Mint Marigold leaves over the entire fish.
9. Gently place the Mexican Mint Marigold flowers in a line down the center of the filet, from tip to tail.
10. Place in over for up to 15 minutes.
Serve immediately.

Hints & Tips

• You may substitute tarragon for Mexican Mint Marigold.
• The yellow flowers do turn brown when roasted. So keep some aside to garnish the trout when done.

Despite their busy home, school and work schedules, several times a year, the Gibson family of Bastrop, Texas, volunteers at the Texas Parks and Wildlife Coastal Expo. Kris Shipman coordinates these events.

If we didn’t have volunteers like the Gibsons, we wouldn

’t be able to reach all the kids and provide those first time experiences outdoors.

Three thousands kids attend the weekend Expos to learn about the marine world. The entire Gibson clan is on hand to help. Meet them next week on a segment of the Texas Parks and Wildlife TV Series on PBS.

[Kaylee Gibson] It’s almost a little bit of an adrenaline rush.

[Chad Gibson] I’d say about 60 to 70 percent of the kids who come through there have never either been fishing, they’ve never been to the coast.

[Travis Gibson] Once you start learning—not only yourself but teaching other kids, it’s really fun. You can develop a habit of teaching people instantly.

[Doriann Gibson] It is hard work. But we get so much more out of it than what we put into it.

The Gibson family first started volunteering at Bastrop State Park in their hometown; and it’s strengthened their bond.

It allowed us to really have that quality time with our kids. It’s fun. It’s purposeful but we get to do it as a family.

Before Summer’s Truly Gone–Get Wet!

Autumn is gaining on us…and no self-respecting Texan would allow an entire summer to go by without spending time in or on the water.

Fortunately, state parks provide opportunities for both.

Want to do a little canoeing, but don’t want to go it alone? This month you can join a ranger for a two-hour, three mile long guided canoe trip through the Martin Dies Jr.’s State park’s swampy marshes and the Neches River. Be on the lookout for wildlife such as bald eagles, belted kingfishers, herons, turtles and alligators. Find the schedule on the calendar at texasstateparks.org.

Make tracks – or is that waves – to any Texas inland or coastal paddling trail. These trails provide well-mapped accessible day trips in a variety of settings, for all levels of paddling experience. Find trail maps online.

Anglers experience a new perspective on the sport by casting a line from a kayak or canoe. It’s simple to do, and you can find tips on the Texas Parks and Wildlife website.

There’s still time to get neck-deep in cool water, as the hot days are quite over. No matter where you live in Texas, there’s a state park with a pool, lake, river, creek, or even ocean just waiting for you to dive in.

We All Have a Coastal Connection

I’ve always thought of Texas as a state with a coast. But Bill Balboa says it’s really a coastal state. And he’s making sure the next generation knows this.

13- I’m trying to bring coastal education inland so kids that don’t get a chance to get down there a lot learn some things about the Texas coast and maybe become better stewards of the environment here.

Balboa is the Matagorda County Marine Extension Agent. He says when we view Texas as a coastal state we recognize that our actions affect the Gulf no matter how
far inland we live. We spoke when he was in Austin to speak to a group of young people at the main library. He said his talks involve show and tell.

27- I talk to them about freshwater gradient, the different kinds of fish, invasive species. I bring sharks. And so, I just talk to them about the diversity that’s there on the Texas coast, and why it is important to be good stewards and for freshwater to make it down to the coast as well. I want to back up. You bring sharks? You know, I work with some of my parks and Wildlife folks–that I used to work with–and I bring some sharks that were caught in sampling, and I bring a lot of other fish. And it makes a lasting impression.

Bill Balboa did say the sharks and other gulf creatures he brings to his talks are not alive; they’re frozen. Sort of like fish sticks–but really–nothing like fish sticks.

With so many reservoirs catching water from late spring rains, fishing in Texas is going to be better than ever in both the short and long term.

10- Texas was blessed with an abundance of water. And thanks to good, creative planning, we were able to redirect many thousands of fish to our lakes of greatest need.

Dave Terre, with Inland Fisheries, says lakes with increased water offer improved stocking survival…

08- …because of all this additional habitat. So, we’re able to divert those resources to those lakes to ensure that we have quality fishing for years to come.

This year, Texas Parks and Wildlife plans to stock between 6 and 8 million Florida largemouth bass.

17- A lot of those fish are going to the lakes that need it the worst. For those lakes that we can’t get to this year, we’re going to go ahead and get to them next year, or the year after next. Texas has about a thousand public reservoirs in the state, and four fish hatcheries to supply fisheries resources to those
reservoirs and rivers.
